All sensors connected via Ethernet

Hello, I'm building a smart home at my house now. I'm thinking of the Homekit solution. But the problem is that the area is quite large and the electrician puts the Ethernet cable wherever the sensor is needed. Bluetooth is impossible to get anywhere I need sensors. The WiFi connection can be unstable, and the wifi connection in our building is not as stable as we would like. So my question is. Is it possible to connect all sensors, such as motion sensor, flood sensor, smoke sensor, cameras, locks or magnet in windows and doors with Ethernet cable? So, of course, all the ethernet cables from all the sensors are grouped in one place where there is a stable internet connection and all the switches and so on. Or is there another solution to solve my problem? Thanks for all the advice.
