Are there really so few "HomeKit only" options?

I've been looking at unifying outlet management, cameras around an Apple TV acting as a hub. After looking at different options (eg the usual suspects like Eufy and Aqara for cameras), I get the impression that each manufacturer has their own application and enrollment process as a prerequisite to adding a device to HomeKit. So if I want to prevent user accounts from multiplying with various manufacturers, is my best bet to pick one brand, say Eufy, configure everything, and then deny internet access at the router level? I suspect something like Scrypted and local cameras are the best solution, but obviously more involved. I'd love to hear your thoughts on this.
