Can you temporarily set up devices on 5G before Fiber is installed?

Not HomeKit specific, but it will be pretty soon... Closing on a new house in a few days. Fiber will not be installed for "10-15 working days". Does anyone know if I can set up some basics like an Apple TV 4k and a TV and maybe a couple of homepods and run them from 5G temporarily then switch to the local router and new wifi network once the fiber is it connected? Or am I asking too much from the phone? I really just want to be able to throw on some music or TV shows in the meantime. I'm not trying to decorate the whole house yet. It seems to maintain a solid 200MB reduction over 5G.
