Constructing Home needs recommendations+advice for HomeKit products

I have a new home and want to make it as close to the best smart home as possible. I've done extensive research and here's what I've found so far that I'll be buying for the house: - crappy lights + Lutron box switches for most lights - smart lights + aquara light switches for lights where I want them to change colors (my partner HAS to have a switch physical) -Aquara door contact sensors -Eve motion sensors -Eufy 2c cameras -Eve Smart Shade thingy -Govee smart tv backlight (heard nano leaf is nasty) -Eufy s330 smart lock camera for doorbell or aquara smart lock Does this list look good so far? I would like recommendations for: - smart light strips (would go under the kitchen cabinet, change colors and ideally could be connected to a switch; I've seen mixed reviews on these) - smart plugs (I've seen mixed reviews ) - smart light bulbs I'd prefer the ones that don't work on wifi, but I'm open. A few questions: 1. Are there other smart products I should consider? 2. How would I connect non-native homekit stuff (like Govee products) to HomeKit? I've heard of the home assistant, but I'm not sure how it works. Please also leave any tips and tricks below. Thanks
