Homekit bulbs - is it possible to bypass the manufacturers application and use them directly with HomeKit?

I haven't used HomeKit so far and I want to get some smart lights. However, I do not fully understand how it works.

Every smart light bulb I look at always requires the download of a dedicated application from the manufacturer to configure them, but then it seems that they can be controlled via HomeKit from then on. But it's not clear if full functionality is available through HomeKit or just the ability to enable / disable them and trigger default modes (or whatever it's called).

Is it a requirement to use the manufacturer's app to use smart bulbs? Or can I do it directly through HomeKit?

The main reason for the question is confidentiality. I'm not interested in having data about when I use lights in my house uploaded to a server somewhere. If I can configure and control exclusively through HomeKit, then I would feel much better about it.
