HomeKit on a dedicated cellular hotspot?

Has anyone tried to do that? I have a small apartment that I would like to monitor a few basic items, thermostat, door lock, door / window liners, motion sensors, leak detection and possibly a water stop. I understand that I should block some internet traffic to try to limit data usage. If I exceed the limit a lot ... then I'll have to look at a second router or wired internet connection. I'm looking at the netgear nighthawk cell router. I'd rather not use a separate router, but I understand that the WiFi range could be an issue. It should support the amount of devices I watch, as well as the speed I need. It would also be an interesting way to quantify how much data configured by HomeKit and IoT devices send ... because there will be no other use. Has anyone tried this or thinks it won't work?
