Homekit safe video question

So we're trying to save some money on our monthly subscriptions and want to get rid of the Apple One for $37.95. However, we have 9 cameras using homekit secure video. I know the 200GB iCloud plan is $2.99/month and includes 5 cameras. Is there a way to keep all the cameras in the home app to view live and only select the 5 cameras we want to record for homekit secure video? Or extra cameras beyond 5 need to be removed from our Apple home? Our plan is to just do Apple TV+ every few months for $9.99/month and then the 200GB iCloud plan. I was looking at the Proton Unlimited as well for more security. Thank you in advance.
