How is security treated when using a bridge such as Lutron or Hue?

I switched to Homekit for my smart home setup. One of the reasons I do this is the security for HKSV and the fact that our voice commands are encrypted and homepods don't listen until I say Siri (at least that's how I understand it). Also, I just want fewer apps and connections etc. All my automations are configured through Homekit and it is mostly lit (for now). But I was wondering last night how encryption / security works if you use a Lutron or Hue bridge. I have both and they are both connected to Homekit. Lighting automations are all through Homekit, but you have to ping a bridge or a Lutron or Hue server, right? How does all this work and can Philips or Lutron watch things or see work from home?
