Light bulbs vs plugs? Questions for beginners

Hi all, I'm trying to delve into the smart home stuff. I have a few questions about preferences. For the most part, you decide whether to get smart plugs/switches or light bulbs. So I've heard a lot about smart bulbs, but I honestly don't care if they change color! I'm a warm white girl through and through. However, it is preferable that the lights are adjustable. Bulbs: Are all HomeKit compatible bulbs dimmable via the HomeKit app? Or do they specifically have to be dimmable HomeKit lights? It seems more expensive to get HomeKit compatible lights with dimming than just any old dimmable light and a smart plug. I also know that software or firmware updates can destroy your bulbs, my friends have had issues with this but no one has complained about it happening with outlets and switches. I currently have a Meross LED strip that I can control via the app. Switches: Essentially the same question here. If I get a switch or plug, does it specifically have to be an adjustable switch/plug type, or can all HomeKit compatible switches and plugs be automatically adjusted via app control? This seems unlikely, as it would imply that the bulb itself should be adjustable, not the plug. Similarly, I would assume that the switch should be a dimmer switch, not an on/off switch. Still, I'm curious if I'm wrong. I would also love product suggestions and links!! Also, if anyone has any suggestions for lighting setups for the back light frames and under light shelves, that would be great. Not sure if there is a wireless option for this. Thanks!
