Lutron switch configuration

I plan to replace a number of light switches with Lutron Cassette switches and inverters and I want to make sure I understand what I need. I have about 10 light switches that control the dimmable recessed lighting. For those who think I just need a smart dimmer switch on the wall and a bridge for everyone (do not provide the approach of 75 devices)? I also have 2 rooms with an existing light switch that controls the recessed lights plus a ceiling fan without an existing light switch. The plan is to replace the ceiling fans and add a light switch. Would I end up needing 3 switches for that? - dimmer switch, regular switch for fan control and regular light control. I assume I should also use the fan switch for the bathroom fan? And a switch for ELV + for the lights under the cabinet. Any other advice before starting the process? Is it worth the kits or do I really just need switches and a bridge?
