Question about darkening with Lutron switches

tl; dr: When do you control the Lutron switches in the Home Application / Control Center so that the associated lights come on in real time?

I have iDevices switches (which I'm super happy with), and one of the things I like about them is that when I turn on / off a switch on my phone, the lights correspond to the adjustments I make in real time. I tried the Wemo dark switches, and unlike my iDevices switches, when I turned on a certain phone switch, the light would "catch" at the brightness percentage after I raised my finger. I wonder if Lutron switches respond in real time, like my iDevices switches, or if they set to brightness after you set the percentage.
