Question about HK security and IoT devices

Hi, I have a doubt about how HK manages / manages devices internally. Suppose I buy AQARA devices (or any other Chinese brand) and pair them ** directly ** in HK without additional applications. Since the HK setup process will provide internet access for these devices, how can I be sure that they will not send data to any third party server alone (that is, only through the device)? I read that when you set up HK directly, you are "safe", but from the perspective of my network, I don't see what can't stop these devices from sending data wherever they want, after HK has provided internet access to them. What am I missing? Thanks!
