Questions about the Homekit thermostat

I have a Honeywell T6 Pro (I know, the worst, but it was installed in my apartment) and I was wondering how everyone configures their thermostats in the home application. I currently use the Honeywell app to manage my programs, as it allows me to set cold / warm to values, but I would like to manage everything in the home app. Does anyone know if your thermostat is set to automatic and you set the temperature to 21, heat to 21 and cool to 21 or there is a variation that is not displayed (such as heat to 20 to 22 to cold). How does each set up their thermostats? I really don't want to offer Honeywell my location 24 hours a day, so I'd prefer Homekit to take care of the house / travel, etc. Thank you in advance!
