Reducing home automation... looking for basic help or a HomeKit mentor.

I have had a fully automated home for a decade. I used HomeSeer and HomeAssistant running on Linux. My systems were X10 to start, but then Zwave and Zigbee. I was a former network administrator and loved to play. I'm moving. I just unplugged everything (every circuit breaker in the house!). I want to simplify the new house. I have AppleTV, iPad, Mac Pro, Mac Mini and my girlfriend has the same so we go to HomeKit. Questions: There doesn't seem to be a central server for this, but your data is hosted in iCloud. Is this the case? Where are events and actions saved? I have seen HomeKit boarder routers for the thread, if there is no central system what does it point back to? I watched several videos of HomeKit users and there is enough equipment. Are there any brands I should get or stay away from? I usually need dimmers, fan controls, motion sensors and door sensors. I'm retired and want the least flash. Some of my existing Zwave gear is pretty good (I have some new motion switches that just came out and some great fan controllers). Can I use these? Anyway, I'm looking forward to a fresh start and a simpler setup that my girlfriend will enjoy and I won't be maintaining the servers anymore.
