Temperature sensor help

I know this has probably been asked a million times, but how often does a smart temperature sensor report to HomeKit? I've been trying for some time to solve a problem with my daughters' nursery. I have a nest thermostat exposed to HomeKit using the starling hub. What I need is a temperature sensor that works with HomeKit that can tell HomeKit that the temperature has dropped below a certain level and therefore I turn on my heating and then turn it off when a certain temperature is reached. I live in the UK, so nest temperatures are excluded because they are not compatible in the UK. I tried the eve, but it was just Bluetooth and it seemed to update HomeKit only with the temperature every 10 minutes. I want to be able to automate so I can control the room temperature. I used the Eve app and the Home + app, but the problem is still how often the temperature is reported to the HomeKit.
