The best way to use ecobee on the second floor

I have a 2-storey house, with most of the living space on the first floor. My house has 2 AC units, one for each floor. I am currently driving an ecobee with HK for my first floor, which is working well. I just installed a second 3 ecobee upstairs. The second floor has an attic area and a theater room that we use occasionally. It also has 2 guest rooms that are rarely used. Right now I have the upstairs unit set so that when occupancy is detected, the temperature drops to 75 and raises it to 80 when it is unoccupied.

I worry that when we have guests staying with us when they go to sleep, the AC will reach 80. Is there a good solution to solve this problem?
