What smart switches work entirely offline?

I just bought a house and I'm looking at introducing a few dozen smart switches. I'm leaning towards a hubless WiFi model, because I have an Ubiquiti / UniFi network that has more than enough capacity for a bunch of them. My question is: which one will work manually if the Internet goes out? Or if the whole network crashes? My wife has a (reasonable) expectation that the light switches will continue to function as light switches, regardless of any internet and network arrangement. For example, will the primary and secondary switches on a 3- or 4-way iDevices configuration (which has a travel cable cover) continue to operate manually if they lose their network connection?
